I had gotten the belly from half a pig for bacon (4.2 kg or 9 lb), and it still had a reasonable amount of rib left on it. So I used the ribs for dinner.
12 or so pork ribs, marinated in
1/2 cup brown sugar
2 Tb tomato paste
1 Tb cumin ground
1 Tb coriander ground
1 tsp paprika
1 tsp salt
1 tsp black pepper
After marinating ribs for at least 6 hours, grill on the BBQ until seared, then cook covered at 140 C (275 F) for 2-3 h. I did this the night before, then reheated the ribs and served with cheese quesadillas and steamed carrots and broccoli. A quick and simple dinner!
