Roast equal portions of almonds, cashews, pecans, brazil nuts and sunflower seeds (total 6 cups) for 10 minutes at 180 C. In a large pan, bring the following to a boil: 1/3 cup maple syrup, 1/3 cup water, 3 Tb light oil. Add nut mix and cook until all liquid is gone, about 5 minutes. Remove from heat and mix thoroughly with 1/4 cup fine white sugar and 2 tsp salt. Spread out on baking sheet to cool.
The kids like this sweet and salty nut/seed mix, and it’s great for triggering the “I want a beer” response in adults!
>How many cups of nuts, more or less? This sounds really good too. If I was making it for just adults, I might add a little spice. What do you think about that? Chipotle pepper? Or just a little cayenne?
>OOPS, I forgot to mention this recipe was for 6 cups of nuts/seeds! I'll amend the post. I've added cinnamon before and it was great. I think Chipotle or cayenne would be great (but my girls wouldn't eat it then). If I were to make it spicy, I would probably replace the maple syrup with honey…maybe it's because I associate maple syrup with spices such as cinnamon, cardamon or allspice, but not chile…worth a try though!
